Intervention 5.2 - Refresher actions

Gastronomy and typical products of the of the Po Delta - Vocational training institute  
This professional refresher course was aimed at people working in restaurants. It contributed to promote the gastronomic culture of Po Delta typical products, which is an enormous tourist, environmental and economic resource. The course involved the operators working in restaurants of the Lidi di Comacchio. During the lessons the participants had to draw up menus, to work on techniques for the presentation of dishes and carry out practical exercises. The course helped improving the skills of people already working in the sector who were interested in growing professionally. The course, lasting from February to March 1999, consisted in 120 hours - 80 hours of lessons and 40 of practical exercises and saw the participation of 11 operators of the restaurant sector.
